two things happened today...one positive, one negative.
good news first: i made yummy porkchops :) this may sound pretty stupid, but whenever i tried making them before they always turned out really dry. then this week at work my coworker told me how she makes hers and so i did that tonight and whola, moist chops (with applesauce too, of course!). who knew you had to pan sear (sp?) them first, then bake them? i always only pan fried them. and i never added a breading, but tonight i used grape nuts that i smashed into smaller crumbs. i also put a dash of Emeril spice in the flour and cereal to flavor the breading. it tasted really good! i'll have to make a special thank-you gift for my coworker!!
then on the bad news side of things: a few days ago i blogged that my life insurance rate was high because of something on the cardiology report. i thought it was just the extra heartbeat thing and now that it was gone the rate would be lower next year. well, i was wrong. i got the letter back today from the life insurance people saying exactly why they increased the premium-seems they dont like that i have a mildly enlarged left atrium and mild mitral valve regurgitation (from what i've read, these go hand in hand. since a little bit of the blood flows back into the atrium due to the valve not functioning properly the left atrium enlarges to pump more blood). i know a few people who also have this mitral valve problem...so be on the lookout if you apply for life insurance and they discover this health issue...you may also be penalized!

Hey, Thanks for the heads up on that one. I didn't know that premiums went up because of that. Once again, Scott says that we are too much alike. Love and miss ya.
Yum! Pork chops and applesauce! As for the heart valve, sheesh, are they nit-picking or what? Its a common heart defect, hundreds of thousands of people live with it everyday.
i agree about nit-picking part..like you said its a very common thing. my dr. even told me it was nothing to worry about way back when. but like another friend commented to me..they just want their money i guess!
I love pork chops too. Try breading them first in shaved parm cheese - then egg whites, pepper, and italian bread crumbs. Then pan sear them - put them in the oven if you want or finish them on the stove, about 3 minutes per side for thin ones. I love them. If you cook them too long, that's when they get dried out!
