week 2 menu winner: Packet method

i learned a way of cooking this week called the packet method. i'm sure people cook like this alot, but for me it was new. basically you take your meat and veggies (veggies on bottom, meat on top),top with salt/pepper/seasoning, add some kind of dressing or marinade and wrap them in tinfoil and bake for 30 min (stopping half way to baste the meat in the juices).

anyway, i made a chicken mushroom packet, and turkey teriyaki packet.(actually i had 4 servings of meat, so i made 4 packets each) the meat was soo moist and the veggies cooked perfectly. and hardly any clean up, which is a plus! :)



the chicken dish consisted of: sliced fresh mushrooms, sliced onions, chicken breast halves, and olive oil vinaigrette dressing.(we added noodles and mixed veggies on the side..looks like a meal you could get at Olive Garden,right? and for much cheaper!!) the turkey dish consisted of: sliced mushrooms, sliced bell pepper, turkey steaks (or you could use chicken breasts), and teriyaki marinade.

both recipes came from the same 4 diabetic cookbook as the lasagna dish.
