my favorite dish made this week (which actually took longer than 7 days cause i wasnt feeling so good for awhile and didn't feel like cooking a big meal every day) was Aloha Chicken. i altered the recipe a little in the serving sizes since it was just 2 of us (recipe makes enough for 8). plus, instead of cooking it in the crock pot, i cooked the chicken on the George Foreman grill and then diced it. in another dish i combined everything else and put the chicken in it to marinade for a bit. then i heated it all up in the pan and added extra pineapple plus some veggies and cous-cous to complete the meal. thus, we have my version of Aloha chicken.

but here is the original recipe from my crockpot cookbook:
3 lbs boneless skinless chicken breast halves
1 8oz can crushed pineapple
1 tablespoon soy souce
2 tablespoon mustard
1 cup packed brown sugar
1 stick (1/2 cup) melted butter
1/2 cup lemon juice
1/2 cup honey
place all ingredients in sprayed slow cooker. cover and cook on LOW for 4-5 hours, or until chicken is thoroughly cooked. serves 8.
